The Finger lime, known as Caviar Lime, is a native Australian citrus that produces delicious and iconic edible fruits. The fruit grows in long slender shapes and is filled with small round red pearly segments that appear like caviar. The taste is an exquisite sweet lime. Finger limes will begin to drop of their own accord, usually between November and March. It’s important to wait until the fruits have matured before harvesting, as this variety will not mature once removed from the branches. The fruit is beautiful in summer drinks and desserts, chutneys, jams and marmalades. Finger limes can be planted in the ground as a beautiful specimen tree or in large pots.

Renowned for its dark red fragrant timber, Toona ciliata displays grey textured bark, russet red new foliage, and sprays of small, white aromatic flowers. In sheltered forested areas it will grow a straight trunk, but in more open surroundings it grows shorter and more spreading, creating a good summer shade tree. The seeds are light and have papery wings which help them to fly on the breeze once the seed capsules open in summer. Red Cedar is a perfect paddock tree due to its size and shade capabilities.

An evergreen tree with deep green, rounded foliage and thorny stems, Rainforest Pearl displays pale white-pink flowers in summer, followed by aromatic, finger-shaped fruits tinged green-red. Rainforest Pearl will begin to ripen but not fully on the tree. Once picked, leave the fruit for five to ten days to completely ripen. Inside the fruits are filled with small pearls of tangy juice, which have a wonderful texture and flavour and are perfect for seafood, Asian cooking and cocktails. As the tree has a slight weeping habit, it can be pruned to shape. Trees will begin to produce fruit from the second autumn of planting.
