Juniperus communis is a hardy evergreen conifer that grows as a small tree or shrub, forming a naturally neat cone of grey-green foliage. It is best known for its fragrant berries, which have been the defining flavour of gin for centuries. In fact, the distinctive taste of gin comes directly from the aromatic berries of this plant. When ripe, the berries are intensely aromatic, and the entire plant releases a pleasant resinous fragrance when brushed or handled.Β The flavour of the berries can vary slightly depending on growing conditions such as soil type, altitude, rainfall and temperature. This variation is one reason different gins develop their own unique character.Β Thriving in full sun to part shade, the berries can take up to two years to fully ripen. When mature they turn black, develop a leathery texture and are covered with a soft white β€œbloom” or dusty coating. Because of the long ripening period, plants often carry both green cones from the current season and ripe black cones from the previous year at the same time.
